日本の本格的なウイスキー造りは、サントリー創業者である鳥井信治郎が、スコットランドで蒸留技術を学んだ竹鶴政孝を招き、1923年に山崎蒸溜所を建設したことに始まる。竹鶴はその後、1934年に北海道で余市蒸溜所を創設。後のニッカウヰスキーを創業した。
戦後の復興期には多くの企業がウイスキー事業に参入し、日本各地に「地ウイスキー」と呼ばれるメーカーが誕生。1983年には国内消費が最盛期を迎えたが、その後は長い低迷期に入り、蒸留所の停止も相次いだ。21世紀に入るとジャパニーズウイスキーの国際的な評価が高まり、さらにハイボール人気やドラマ「マッサン」の影響で、ブームが加速した。
2016年頃からは全国各地でクラフトウイスキー蒸留所の設立が相次ぎ、地域の風土や素材を生かした多様なウイスキー造りが広がっている。
Authentic Japanese whisky production began when Shinjiro Torii, the founder of Suntory, invited Masataka Taketsuru, who had studied distillation techniques in Scotland, to build the Yamazaki Distillery in 1923. Taketsuru later established the Yoichi Distillery in Hokkaido in 1934, which would later become Nikka whisky.
During the postwar reconstruction period, many companies entered the whisky business, giving rise to makers across Japan known as 'regional whiskies.' Domestic consumption peaked in 1983, but afterward, the industry entered a long period of decline, and many distilleries were forced to halt production. In the 21st century, Japanese whisky gained international acclaim, and the boom
accelerated further due to the popularity of highballs and the influence of the TV drama 'Massan.'
Since around 2016, craft whisky distilleries have been established throughout Japan, promoting a diverse range of whisky production that makes use of local climates and ingredients.
